Okay okay, I know we all got bored of banana bread after lockdown but when you’ve got bananas browning in the fruit bowl, they are literally calling you to make them into cake. Stop trailing the internet, this is the recipe you have been looking for… Your kids will love them, they’re a weekly fave in our house and so simple to make. Yes even you could make them!

* MIX BY HAND *  VEGAN  *  LOW SUGAR * MAKES 12 MUFFINS OR 1 TRAYBAKE *
Preheat oven to 160C Fan
1. Mash 4 bananas in a bowl and mix in150g soft brown or caster sugar, 120ml sunflower oil, 120ml plant based milk, 1 tsp vanilla and 2 tsp cider vinegar.
2. Add in your dry ingredients, 375g plain flour, 2.5 tsp baking powder, 1tsp bicarb, 1 tsp cinnamon.
3. Combine well with a spatula and divide into 12 muffin cases using a ice cream scoop.
4. Bake for 15-20 minutes until cake springs back and skewer is clean.
